This week was a bit random. I did quite a bit of making things on the fly without recipes with pretty good results.
Mom's Lasagna Vegetarian-ized
Making lasagna was something my mom and us kids did a few times a year and whenever that happened it was a big production. We would make enough pans to feed ourselves for a week which involved an assembly line of sorts to pass the pans around to all of the stations - ground beef, ragu, mozzerella cheese, cream cheese, cottage cheese, mushrooms and noodles. I think one of the big successes of this dish is the mass amount of cheese, and of course the mushrooms. Here is my version, without the ground beef.
Makes 2 9x13 and 1 9x9 pans

Ingredients:
- 2 boxes of lasagna noodles
- 2 large bottles Ragu (we use the garden veggie one)
- 8oz of Cream Cheese
- 3 blocks of Cheese - shredded
- 2 containers Cottage Cheese (we use large curd)
- 2 containers Mushrooms
- Bag of Spinach
Instructions:
- Boil lasagna noodles
- Pull out the pans - put a layer of Ragu sauce on the bottom
- Begin layering
- Noodles
- Ragu
- Cottage Cheese
- Cheese
- Cream Cheese - dime sized pieces
- Mushrooms
- Spinach
- Noodles
- Ragu ..
- I only got 2 layers since I put down a lot of spinach
- Place in preheated oven (375) and cook for ~1 hour or until bubbly and brown on top

Superfood Salad from Iowa Girl Eats
Apparently pomegranates are only available in the fall, so we did without. Was very tasty. Bf approved!Enjoyed with some bloody mary's mmmm
I had hoped this would turn out...but I am sad to report that it was nasty. I barely choked down 1 piece. Bf had 5 pieces though..soo...haha The aversion for me was that I toasted the walnuts in a pan that my parents got me for Easter. The bf had said that he cleaned the pan, when he didn't, and I have no idea where that pan came from, but it smells like a basement...YUK! I scoured it and seasoned/cooked it with olive oil..so hopefully next time will be better.
