This week was an "
Oh She Glows" type of week with most all of the recipes coming from my new favorite blog. Prep started Sunday after a semi-frustrating trip to Whole Foods. Sometimes I feel like I can't find
anything there. **Note for readers: Phyllo dough is found in the frozen section next to the pies and Tahini is found next to the peanut butter** :)
Prep on Sunday consisted of making OhSheGlows
Tahini Lemon Garlic Dressing which is amazing! I made 2 batches since I used it in two meals this week. I also made some snacks for the week
Pumpkin Chocolate Chip Granola Bars from TwoPeasAndTheirPod. They definitely taste healthy, but even-so, very good. Bf decided to make brownies tonight, so maybe they need more chocolate next time ;)
I doubled the batch and used a 9x13 pan, so they were a bit thicker than the original recipe. Now what to do with the extra pumpkin and applesauce?
Monday:
Weekend Glow Salad from OhSheGlows. Best kale I have ever had. Dressing was amazing. Tomatoes, cucumber and pepper from the garden. Couldn't find goji berries, so used all raisins.
Tuesday:
Stuffed Mushroom Phyllo Roll from OhSheGlows. Quadrupled the recipe! Figured if Angela and her husband easily finished one roll, then my 6'4" man, myself, his sister and friend would eat far more than that. We had enough left over for 4 lunches! Modifications: used real butter and cheese.

Wednesday:
Protein Power Goddess Bowl from OhSheGlows. I was a bit skeptical of this at first because of the name. I have been drinking green smoothies on and off and usually the weirder the name the weirder the taste. This bowl of greatness was
amazing! The bf liked Tuesdays dinner better, but I really liked this one. I think it is the lentils, millet and of course the tahini dressing. I subbed millet as my grain of choice, spinach for my green of choice (already ate kale twice this week) and had to be a bit lenient with my tomato and "red" pepper.
