Pizza

Pizza has been a reoccurring meal at our house.  For crusts, I have tried using the refrigerated pizza crust dough and the pre-baked pizza crusts.  Just yesterday I tried a recipe for homemade pizza crust.  It was amazing.  I bit more work, but definitely worth it.  This recipe for Premium Pizza Crust comes from All Recipes.  I used the overnight cold rise method where you mix everything up and let it set in the fridge overnight.  My kitchen aid mixer helps with the mixing and kneading.  And then the next day, you get this:

I doubled the recipe so I could make 2 large pizzas and ended up adding 1 1/4 more cups of flour as mentioned by some of the reviewers on All Recipes.  The two pizzas I made yesterday were Pizza Without the Red Sauce and Black Bean Spinach Pizza.  The Red Sauce pizza was the winner by far; it was completely eaten.  I have almost an entire pizza left of the black bean.  Its not-so-great quality might be attributed to my forgetting to buy salsa (used diced tomatoes instead) and using fresh spinach instead of frozen.

Here are a few of the other pizza recipes that I have tried over the past few months.
Hummus Pizza
Chicken Avocado Pizza
Caramelized Onion and Gorgonzola Pizza

None of these used any "red sauce" and were all amazing.  Next time they will be made with my new homemade pizza crust.
