Christmas Baked Goods

Hello, my name is Jessica, and I'm addicted...to baking...
I must have made over 100 sugar cookies last weekend...
 I doubled this highly rated recipe from AllRecipes.
 Joann's had a pack of 40 cookie cutters.  Half were large and half were smaller versions of the large ones.

 Aren't the little guys adorable?
 I frosted the larger ones using a water and confectioner sugar mix.
 Then filled up a large tub with wax paper in between each layer - very good idea!
Since we had so many, I decided to take them to work, and there were still cookies left over!

Then this most recent weekend, I made four more recipes..
Eggnog Biscotti




These were amazing and would make great gifts.  After 4 days or so they start to lose their crisp-ness.

Candy Cane Fudge

 Got the swirl using a few drops of red food coloring.

Peppermint Fudge Cookies


I can't say enough good things about these cookies.  They were the bf's favorite.  It is the hard fudge paired with soft cookie that makes them irresistible.  

Apple Candy Cane Coffee Cake
For this recipe, I used cut up apples cooked down in place of the frozen raspberries.

And in case you were wondering...here is how I cut up apples.  Peel, then cut into quarters.
 Cut off the ends diagonally.
 Then diagonally cut out the mid section - core of the apple.

 Slice, then put them in a pot on the stove top and cook them down with a tablespoon of both sugar and butter.

 In the meantime, make the dough.
 I thought this recipe was for 1 candy cane cake...and was caught offgard halfway through the recipe when it said "Yes, this recipe makes 3 candy cane coffee cakes."  One of these went to a Christmakwanzahannukah Party. I'm thinking the 3rd one chilling in my fridge will come with me to work tomorrow...


 They were quite spectacular looking and easier to wrap up than I thought.

 I made the Eggnog Biscotti frosting for these (from OhSheGlows) with some added red food coloring.
 I should have added more red food coloring...the boys at the party were quick to comment on how the icing was the same color as Barbie's skin....errrr....
At least they tasted good!  One party-goer even took some home with her to eat for breakfast and called me the following day while she was eating it to say how good it was.  Compliments?  I'll take em!
