Farmington Hills has a winter farmers market this year in which I plan on attending every Saturday. This past week, I picked up a cabbage, onions, eggs and popcorn. Cabbage was the local ingredient in 2 of our dinner meals this week.
Monday: Roasted Red Pepper Egg Sandwiches
From my homemade english muffins, we made breakfast sandwiches with egg, bacon, cheese and a canned roasted red pepper from Whole Foods. The roasted red pepper took the sandwiches from standard breakfast to amazing breakfast.
Tuesday: Crispy Black Bean Tacos with Slaw from Bon Appetit
The Tabasco gave the tacos a good spicy kick.
Wednesday (and beyond...): Thai Noodle Salad from AllRecipes
This salad took a LOT of prep work, but it was well worth it. I cut up the peppers, shred the cabbage and carrots the night prior. This left only the cilantro and green onions to deal with the day of.
Any good advice on how to cut the leaves off of cilantro without taking over 1/2 hour?

I was surprised at how such simple ingredients could make such a great meal. I made the cole slaw from only shredded cabbage.

We ended up only adding the dressing to the portions as we ate them so that the salad wouldn't get soggy throughout the week. This makes a ton of food. Would be great for a potluck. The taste was amazing. The bf said that it tasted like something you would get at a Thai Restaurant. I take this as a huge compliment!
We still have half left over to finish this weekend... :)
