Preserving Green Tomatoes

Sadly, I had a LOT of tomatoes that did not ripen before the growing season was over.  Being the frugal person that I am  :)  I decided to bring them ALL inside to ripen.
And when they turn red enough...
...it is time to boil and freeze them!
 I found that I wouldn't be able to make recipes every week that called for 2-3 tomatoes.  So, I am hoping by putting them away in the freezer, that I can use them to make a chili this winter.

In order to do this, clean up the tomatoes and get a pot of boiling water going.  Once it is boiling, drop in the tomatoes 1-3 at a time.

Wait for the skins to break like so ...
Remove them from the boiling water and place in a bowl of cold water with ice cubes.


Once all the tomatoes are boiled and cooled off in the water enough to handle them, go ahead and peel the skins off.  They should come off very easily.


From there, remove the core with a knife and chop the tomatoes up into what ever size chunks you would like.
I then placed them in a zip lock bag along with a few tomatoes that I had frozen the week before.  Now I wait to see whether the remaining tomatoes will ripen or rotten...
