Chocolate Peppermint Cake adapted from LetHerBake
For the holiday potluck at work, I wanted to bring a good cake with a holiday flair. I decided holiday flair = peppermint frosting. The cake was made with no modifications except the addition of 1 teaspoon peppermint extract in the frosting.
I found the frosting to be a bit "wet" at first and had a toppling over incident in the fridge. Luckily after it got cold, the cake hung together well and even survived the drive to work. I made it a 3 layered cake since I didn't have any 10" baking pans. Sorry for no "internal" pictures - cameras are not allowed where I work.
I am now buying my chocolate in bulk chunks from Whole Foods. The hammer is becoming a common kitchen tool :) ...
I have also decided that I am using parchment paper with every cake I bake from now on. Look at how great these came out of the pan!
