The Week of the Local Squash

After reading "Animal, Vegetable, Miracle" I became more aware of what my eating habit is.  I don't want to be labeled as a vegetarian or a vegan or anything else fancy...but I think what I would like to strive towards is being a locovore.  I guess the main reason I try to avoid meats is because of how the animals are raised and packaged.  The conditions along with the animals unnatural diet make for a gruesome way for us to get our food.  Did you know that the turkeys raised in this day in age cannot reproduce by themselves?!  I would like to get back to knowing where my food was raised and how it was raised.

Anyways, here is my week in review.  Groceries are now being purchased from Whole Foods and the farmers market.  (We have a winter one now in Farmington Hills!)  From now on, I will also try to eat more local and in season foods.

Monday: Miso Salmon from AllRecipes with green beans from the garden

In order to use up the miso from a few weeks ago, I chose this recipe.  We found the miso to be very overwhelming and salty.  The recipe made WAY too much sauce for our 3 lbs of salmon.  I will not be making this dish again.  The green beans from the garden that we had on the side were amazing though!

Tuesday: Risotto with Butternut Squash and Leeks from Bon Appetit

Only substitution I made for this recipe was dried herbs instead of fresh.  I am not sure basil is available at this time of year  :)  At least not at Whole Foods.  Both myself and the bf's sister thought this was a good meal...the bf, not so much.

Wednesday: Macaroni and Brie with Crab from Better Homes and Gardens

This recipe was full of disappointments.  While making it, I was super excited for how great the cheese and the crab would taste.  It smelled great.  Tasted...very bland...  I think I added far too many bread crumbs on top and they soaked up what would have been a tasty cheesy sauce.

Thursday: Stuffed Acorn Squash from Angie's Kitchen

This was a great recipe.  Fancy looking and tasty.  There was some filling left over, but I am not worried about it being eaten.


Friday: Artichoke, Red Pepper & Pesto Pizza

Following the book "Animal, Vegetable, Miracle" I thought it would be a good idea to have pizza every Friday.  When the crust is made the night before to rise in the fridge overnight, there is not a lot of prep work Friday evening.  This is great, because usually after a long week at work, we would end up going out to eat instead of cooking.  This way, the crust is made, so the pizza has to be made, and throwing on a few topping and popping it in the oven isn't very time consuming.

For this one I got some red pepper pesto at Whole Foods, mozzarella cheese, canned red peppers and canned artichokes.

Sweets of the week included double chocolate dipped pretzels and a chocolate peppermint cake for a work potluck....plus I made 100+ sugar cookies to bring in for yet another work related food coma activity.  I will post about my sugar cookie adventure soon.
